Dinner last night. Keeping up with the low carb, teri hamburger and brocolli. Nom nom nom. Fun fact: I HATED broccoli growing up. (Who didn’t, right?) Well, I recently found out that I hated it because of the way my mom had prepared it. She’d saute it with butter and cook it down till it was soft and mushy.
With my recent meal prep, I decided to keep as much nutrients in it as possible, I’d just blanch them with a little salt. OH MY YUMMINESS! I can eat broccoli all day, every day when it’s prepared like that. Now, if I can only get my daughter to love it as much as I do!
